Mediterranean chicken Greek-style

Here is a simple and delicious low carb recipe that you can prepare quickly.
The oven-baked chicken breast goes perfectly with Mediterranean vegetables and only provides approx. 7.8g of carbohydrates per portion.
The Greek-style chicken is therefore ideal for a “low carb”
nutritional approach. It is also filling and long-lasting, making it a great “weight loss recipe”.

Ingredients:
600g chicken breast
200g feta or feta light (if less kcal. are wanted)
200g cherry tomatoes
100g olives (black or green, depending on your taste)
1 yellow bell pepper
1 red onion
1 clove of garlic
3 tbsp olive oil
1 tbsp fresh lemon juice
1 tsp oregano, grated
1 tsp thyme, grated
½ tsp marjoram, grated
½ tsp salt
¼ tsp pepper

Preparation: approx. 15min
Baking time: approx. 30 min
Total: approx. 45min

1. You need: 200g feta or feta light (depending on the amount of calories you want), 200g cherry tomatoes, 1 yellow bell pepper, 1 red onion.

Halve the cherry tomatoes, slice the onion and cut the bell pepper into strips. Dice the feta and put everything together in a large bowl.

2. Preheat the oven to 200°C (top and bottom heat).

3. You will need: 600g chicken breast, 100g olives, 3 tbsp olive oil, 1 tbsp fresh lemon juice, 1 tsp oregano, grated, 1 tsp thyme, grated, ½ tsp marjoram, grated, ½ tsp salt, 1/4 tsp pepper, 1 clove garlic

Drain the olives if necessary and place in the large bowl with the chicken breast (see point 1).
Squeeze the garlic clove into the bowl and then add the olive oil, lemon juice and spices.
Mix everything together.

4. Place the vegetables and chicken in a large casserole dish or 2 smaller ones.

5. Cook the chicken in the preheated oven for about 25-30 minutes, depending on the thickness. A thicker chicken breast needs about 30 minutes in the oven to cook, and a thinner chicken breast can be cooked in about 25 minutes.

Depending on your appetite and training goal, the recipe is designed for 2-3 people.
